Tropic Glow | Mango Co-fermented Coffee Brewing Guide

Tropic Glow | Mango Co-fermented Coffee Brewing Guide

Meet Tropic Glow, the mango co-fermented coffee in our Wonderland Collection. A little tropical sunshine for your morning ritual, with an invitation to explore coffee beyond the familiar.

For brewing at home, start with a V60. Its paper filter produces a clean cup, giving you space to explore the coffee’s fruit character as it cools.

Your V60 recipe

This recipe is a starting point. Adjust the grind to suit your equipment and, above all, your taste.

What you need Amount
Tropic Glow coffee 15 g
Filtered water 240 g
Water temperature 92°C
Grind Medium-fine
Target brew time Around 2:30–3:00
Makes One cup

You will also need a V60, paper filter, scales and a timer.

Step by step

1. Prepare your brewer
Place the filter in your V60 and rinse it with hot water. This also warms the brewer and cup. Discard the rinse water.

2. Add your coffee
Grind 15 g of Tropic Glow, add it to the filter and gently shake the brewer to level the coffee bed.

3. Let it bloom
Start your timer and pour 45 g of water over the grounds. Give the brewer a gentle swirl to wet any dry patches, then wait until 35 seconds.

4. Build the brew
Pour slowly in small circles until the scales read 150 g, aiming to finish this pour around 1:10. Keep the stream gentle and avoid pouring directly onto the filter walls.

5. Finish your pour
At around 1:20, continue pouring until you reach 240 g. Give the brewer one gentle swirl and allow the water to drain.

6. Taste, then taste again
Swirl the finished coffee and let it cool slightly before drinking. Return to it over the next few minutes: temperature changes how you perceive its aroma, sweetness and acidity.

Make it your own

Change one variable at a time so you can hear what the coffee is telling you.

  • Sharp, thin or underdeveloped? Try a slightly finer grind.

  • Bitter, drying or heavy? Try a slightly coarser grind.

  • Too intense, but otherwise balanced? Add a small splash of hot water to the finished cup.

  • Too delicate? Reduce the brewing water to 225 g, keeping the coffee dose at 15 g.

Use the brew time as a guide. The flavour in your cup matters more than hitting an exact number.
