How to brew Winter Reverie — Festive Cappuccino

Christmas in Wonderland, in your cup.

Our No. 001 Pink Bourbon meets Ember Spice cinnamon co-fermented coffee in a blend reminiscent of mince pie. Paired with silky steamed milk, Winter Reverie makes a comforting cappuccino for slow winter mornings.

You’ll need

  • 18 g Winter Reverie, finely ground

  • An espresso machine and grinder

  • Cold whole milk or barista oat milk

  • A 150–180 ml cup

1. Prepare your espresso
Warm your cup. Add 18 g of ground coffee to a suitable double basket, distribute evenly and tamp level.

2. Extract
Aim for 36 g of espresso in 27–32 seconds, timed from starting the pump. Use this as a starting point and adjust to taste.

3. Steam your milk
Pour enough cold milk into your jug for its steam wand to work effectively. Introduce a little air at the start, then create a whirlpool for smooth, glossy foam. Aim for 55–60°C.

4. Pour and enjoy
Gently swirl the milk and pour over your espresso, finishing with a soft layer of foam. Keep the drink small enough for the coffee’s festive character to shine.

Our serving suggestion
Enjoy without added cinnamon, syrup or chocolate powder first—the warming spice comes from the coffee itself.

For a stronger coffee flavour, choose the smaller cup. For a softer, creamier drink, use the larger one.
